This directory includes the approximately 1,100 federally-inspected slaughterhouses, where 99 percent of all animals slaughtered in the U.S. are killed (not included are slaughter facilities operating under state inspection and not involved in interstate commerce).
Most are slaughter/processing facilities, where animals are both killed and processed (cut-up, skinned, boned, canned, salted, etc.).

M = cow, pig, sheep and goat slaughter.
P = poultry slaughter. The majority of poultry slaughterhouses are for chickens, but at these facilities turkeys, ducks, geese, guinea fowl, ostriches, emus, rheas and squab may also be killed and butchered.
V = slaughter of other animals; for example, bison, deer, elk, rabbits.

Canada:
This directory includes the 110 federally registered slaughterhouses in Canada (as of July 2012), where 95 percent of all animals slaughtered in Canada are killed. Not included are small, provincially registered slaughterhouses (meat from a provincially registered establishment can be sold only within that province).
